“The jewel in Vancouver’s culinary crown,” West's outstanding contemporary regional cuisine and seamless service has garnered much critical acclaim, including a prestigious four star rating by Mobil Travel Guide and recognition as one of the "ten of the best, worldwide" by UK's Sunday Independent. For the fourth consecutive year, West was also awarded the title of Vancouver magazine's ‘Restaurant of the Year,’ an honour that recognizes the restaurant at the peak of a city emerging as a world-class dining destination.

Executive Chef Warren Geraghty sources pristine local ingredients to deliver superbly conceived dishes honouring the region’s unparalleled diversity. According to Geraghty, “It is entirely about using the ingredient at its natural peak; working with trusted purveyors and applying thoughtful preparation.” Exuding energy and action, Geraghty leads the back-of-house to render an up–close culinary theatre experience to the two adjacent ‘chef 's tables.’

Accomplished Pastry Chef Rhonda Viani conjures equally compelling desserts, while Maitre 'D, Brian Hopkins gracefully choreographs West's prized front-of-house brigade. Continuing to evolve in the pursuit of excellence, Hopkins and his team emerged the consecutive leader for Vancouver magazine’s ‘Best Service’ category. “So smoothly executed,” one judge remarked, “you don’t even know how they did it until you realize you’re not walking out of the restaurant – you’re floating.”

A magnificent, temperature-controlled wall of wine houses West’s extensive wine collection, an ever-evolving list of acclaimed Old World producers, rare finds and exciting New World vintners. A perennial recipient of Wine Spectator’s ‘Best of ’ Award of Excellence, West also took top honours at The Vancouver Playhouse International Wine Festival in the newly-introduced Platinum category, as one of only three restaurants overall who "raised the bar a level higher."

At the gleaming cherrywood bar, martinis and cocktails are composed of pressed-toorder juices, fresh herbs and creative infusions by Vancouver magazine’s ‘Best Bartender’ David Wolowidnyk, who was also recently crowned ‘Canada’s Best Mixologist.’

West is located in Vancouver's chic South Granville neighborhood (under five minutes from the downtown core). Valet nightly.

STARTERS

Salad of young BC vegetables with sliced rabbit gammon.

Ceviche of BC spot prawns, chilled saffron tagliolini and orange and geranium fruit “caviar.”

Tian of dungeness crab with couscous and smoked tomato gazpacho.

Galantine of Thiessen Farm quail with jasmine scented raison puree and hedgehog mushrooms.

Roasted noisettes of veal sweetbreads, duxelle of mushrooms with carrot and cardamom jus.

Royal myagi oysters with a salad of coho salmon gravlax and cucumber, five spice scented duck crisps.

ENTRÉES

Queen Charlotte halibut, Hannah Brook Farm watercress sauce with buttered mussels and clams, sautéed trompettes.

Breast of Polderside duck baked in a potato rosti, panfried pate and pickled vegetables.

Tenderloin of Alberta beef, caramelized onion puree, parsnip dauphin.

Fillet of sturgeon roasted in light curry spices, cumin scented sunchoke puree with sweet roasted pearl onions.

Saddle of Salt Spring Island lamb with “shepherd's pie”, sautéed wild leeks and mint jus.

Kabocha squash gnocchi, spinach and sorrel sauce, grilled marcella goat cheese and fine herb essence.

DESSERTS

Roasted rhubarb with sesame snap ice cream, crispy puff pastry and apple butter.

Tasting of chocolate: chocolate caramel tart with pistachio grenache swirl ice cream, chocolate espresso mille-feuille with pistachio praline, chocolate panna cotta with mocha cake.

Lemon tamarind frozen soufflé with strawberry sorbet, citrus meringue and caramel wafer.

Vanilla peach pie with skewered blackberries, crushed gingersnaps and ginger golden plum sauce.

Breaded cherry dumplings with lemon mousse and sake poached cherries.

Best of the Cellar

West’s established wine library is widely regarded as one of the best in the country, with 1000 labels in residence. The collection is an ever-evolving list of acclaimed Old World producers, rare finds and exciting New World vintners.
