Poised at the edge of Coal Harbour, just steps away from Stanley Park and the world class downtown shopping is Vancouver’s most luxurious new boutique hotel. Inspired by the natural beauty of the surrounding area, the Loden Hotel is an architectural wonder highlighted by its distinctive and stunning restaurant Voya. Already lauded by Urban Diner as 2008’s Best New Restaurant, Vancouver magazine proclaims, “Voya delivers on all fronts. The sumptuous room keeps heads on a swivel and chef Marc-Andre Choquette masterfully coaxes rich flavour from seasonal ingredients. This is the best food we’ve had all year.”

Derived from ‘voyage’, the name evokes Chef Choquette’s global influences and his philosophy that great food can be a journey unto itself. Just entering the dining room is a transcendent experience. Beyond a striking double-sided marble fireplace are three radiant chandeliers illuminating white lacquered tables and chocolate and periwinkle hued upholstery. Yet, despite the luxe setting, the value-savvy cuisine is surprisingly approachable. Chef Choquette’s seasonal menu remains vibrant with frequent changes as new ingredients become available. “New recipes prevent us from ever becoming complacent,” he states. Chef attributes part of Voya’s allure to the spontaneity of the menu – not to mention Italian-born pastry chef Maurizio Persichino’s fabulous desserts. General manager Rob Herman elevates the stellar cuisine with intuitive service and superlative wine knowledge. A member of the Canadian Sommelier Guild, his wine list is comprehensive, accessible and always stresses good value.

Voya’s lounge, featuring a stunning backlit sandblasted glass bar with marble accents, is a bone fide head turner. With one of the best cocktail lists in the city, the Voya lounge pays tribute to classics from the Golden Age of Cocktails while simultaneously creating new ones using fresh ingredients and precision techniques. The expert bar staff have an encyclopedic knowledge of spirits and liquors, allowing them to create ethereal concoctions ‘on the fly’ based on the guest’s preferences. Amping up the sexy vibe are live DJs that take lounge lovers on a rhythmic voyage of sight and sound after 10:30 every Friday.

A member of the Green Table and Ocean Wise sustainable programs, Voya is a leader in progressive, eco-friendly practices. Be it a power breakfast, prompt 40-minute business lunch, cocktails in the ultra-chic lounge or a leisurely dinner, there is always something to experience at Voya.
