Italian Inspired Wood-Fired Cucina
Photos by Steve Li.
A winding stone staircase leads the way from bustling Robson Street to this celebrated Vancouver dining room, acclaimed for its Italian inspired menu, award-winning wines, and industry-leading service standards led by Director Ricardo Ferreira.
Executive Chef Julio Gonzalez-Perini and his team work in the dramatic open kitchen, masterfully orchestrating CinCin's heritage wood-fired grill, oven and rotisserie. An ingredient-driven, seasonal focus sets the tone for Gagnon's menu with distinctive dishes embracing the sensibilities of the Mediterranean. Premium cuts of steak from around the world are grilled over a wood fire.
Outstanding desserts demonstrate the Michelin star-studded pedigree of renowned Chef Patissier Thierry Busset. A legend in his native France and the man whom Gordon Ramsay proclaimed as the "best pastry chef in London", Busset collected Gold for ‘Best Last Course’ in the 2008 Vancouver Magazine Restaurant Awards.
Recognized by media both locally and internationally, Vancouver magazine remarked that “over delivering has become routine”, while Frommer’s Guide noted that "the food at CinCin is exemplary. The service is exemplary, the desserts divine."
Designed to compliment and complete the dining experience, CinCin’s wine libary is deep and global with old world classics and new world varietals, offering rare vintages and boutique finds, as well as an extensive by-the-glass and half bottle selection. Housed in the private dining room, the collection annually garners a host of prestigious awards, including Wine Spectator’s ‘Best of ’ Award of Excellence and the Vancouver International Wine Festival's Gold Glass Award.
The elegant curved marble bar is a central feature, accented by stone walls adorned with fine art and tall arched windows opening onto the secluded terrace.
A favourite destination for visiting celebrities, locals and culinary travellers alike, CinCin strives to deliver unrivalled experiences afforded by a combination of exceptional cuisine, commitment towards an exemplary wine program and true hospitality.
"Chin-Chin", a toast to good health, friends and the pleasures of fine food and wine.
