Chow (3121 Granville St., 604-608-2469) has fully embraced the citywide move toward eating local — the menu lists all of the regional suppliers, like Chilliwack’s Polderside Farms, which provides the organic chicken for a dish served with Japanese eggplant purée, quinoa with braised endive, crispy panko and orange zest-cilantro-mint gremolata.
