The Cannery Seafood Restaurant has been a local favourite since 1971 for both its fine cuisine and waterfront location in the Port of Vancouver. Surrounded by fisheries and the action of a busy harbour, The Cannery offers guests a unique oceanside experience. The simple and rustic decor with a mix of nautical artifacts provides the ambiance of a traditional West Coast fish cannery.

The setting’s natural beauty is the perfect backdrop to Executive Chef Frederic Couton’s vibrant cuisine. While he draws on his French heritage, he also uses innovative cooking techniques. Using the freshest local and exotic produce, he creates truly international flavours. “One of my goals is to entice a new generation of diners, with their sense of culinary adventure, to come and rediscover The Cannery,” says Couton. He shares his approach in Chef Couton’s Cookbook, which won a Vancouver magazine’s Gold Medal for Best Food/Wine book of the year in 2005. Also available at the restaurant is his famous secret ingredient: The Cannery’s Lobster Oil.

Chef Couton’s menu is perfectly complemented with an extensive wine list, which offers fine selections from Old World and West Coast wineries. These include 37 Award of Excellence winners, as recognized by The Wine Spectator and The Vancouver Playhouse International Wine Competition.

Just 15 minutes from downtown, The Cannery has free parking and is accessible by land or water. A 140-foot-long private dock allows boat owners to tie up their vessel and enjoy a fine lunch or dinner, or pick up The Cannery Picnic Basket for a special meal at sea. The dock also offers guests a pleasant stroll where they can see the harbour action up close.

While it reflects Vancouver’s long port history, The Cannery has maintained its status as a landmark and dining establishment of distinction with constant innovation and commitment to excellence. Here is tradition both old and new, served up in an authentic saltwater setting.

A Cannery Classic with local salmon, fresh shrimp meat and mushroom duxelle, baked in a golden puff pastry, pinot noir sauce
