Executive Chef Jim Romer and his team travel the globe in search of tantalizing new flavours and cooking techniques to incorporate into the lunch, brunch, dinner and bar menus for their 12 restaurants in Greater Vancouver. “Our guests are not afraid to try dishes that are familiar but with a globally inspired twist — in fact, they crave them!” he explains.
From the Bellini to the Hot Spinach and Artichoke Dip, Milestone’s signature originals are the mainstays of the affordably priced, abundant offerings for which the restaurant is known, while newly inspired items from the “Inspirations” menus keep guests coming back for more. These fresh and inspired menus highlight Romer’s most recent travels and change four times a year to reflect the bounty of the season. This year saw Romer going back to his roots in Mendocino, California, where he met up with internationally renowned chef and author, John Ash, a pioneer of California wine country cuisine.
This year’s summer menu includes big, bold flavours of hot sunny climates. The Grilled Seafood Salad with lemon-chardonnay vinaigrette and the Hawaiian Grilled Top Sirloin and Giant Black Tiger Prawn are spectacular. Or enjoy an afternoon on the patio sampling internationally inspired beverages: there’s Stella Artois on tap and Sol, the original Mexican Beer, Mojitos in Classic Mint, Blueberry, Mango or Blood Orange or try the newly unveiled Brazilian sensation: Caipirinha, a truly refreshing summer drink.
All of Milestone’s restaurants boast a stylishly comfortable atmosphere, and attention to detail is defined throughout: many menu items are made in-house daily using the freshest high-quality ingredients, and meats are cured and smoked on the premises.
