Chef de Cuisine Robert Belcham stays ahead of the culinary curve with his edgy and imaginative ideas. C’s menus are contemporary and always changing, always on the move — like the joggers, roller bladers and casual strollers on the wide seawall beyond the patio. You can while away a leisurely afternoon on the large patio, watching sailboats as you sip on champagne and enjoy Skeena Wild salmon. “I draw on techniques from every type of cuisine,” says Belcham. “We represent what is truly Canadian Cuisine, utilizing influences from the world over, but focusing on the great seafood we have available to us in Vancouver.”
The award-winning C is also an innovator with its seafood program, Ocean Wise. The founding restaurant partner with the Vancouver Aquarium, C follows a sustainability plan to ensure that every fish on the menu is harvested wisely. “Making sustainable seafood choices is the key to ensuring that a wide variety of seafood is around for generations to come,” says Executive Chef Robert Clark. Try the indigenous spot prawns, slow poached for exquisite flavouring; or the pan-roasted trout, crispy skinned and butter finished.
The attention to detail does not stop with the food. Owner Harry Kambolis and General Manager Leonard Nakonechny believe that an evening at a restaurant reflects complete entertainment, and with this in mind, consulted with Ballet BC to improve on the service presentations at C. Ballet BC spent evenings at C observing the overall movement of staff, from their time spent in the kitchen to the front of the house. The outcome is obvious, from the first greeting to the final farewell: grace and style is an integral part of the evening.
C’s décor, like its name, is minimalist. Huge windows look out to the sailboat-studded False Creek, cityscape, ocean and mountains beyond. Simply, C reflects Vancouver itself: outwardlooking, individual, unconventional. Wine Spectator repeatedly awards Sommelier Tom Doughty for his splendid cellar: toast our city with a glass of his best.
