Mark Kiffin, celebrated chef, owner, and author of the Compound Restaurant, has won the James Beard Foundation Award as one of America’s Best Chefs. The Compound is Santa Fe’s premier restaurant with Chef Kiffin’s acclaimed seasonal contemporary American cuisine derived from Santa Fe’s rich heritage of regional and Mediterranean influences. Chef Kiffin’s menus focus on the exclusive changes in seasons, such as hearty braised dishes in the fall and winter using apples, pears, and cider from local harvests; osso bucco; and porcini risotto, while spring and summer dishes feature fresh local vegetables and naturally raised organic lamb and delectable strawberries.

Classic signature dishes include Grilled Harris Ranch Black Angus Beef Tenderloin with foie gras Hollandaise and cepe O’Brien Potatoes, Seared Diver Scallops with spring peas and bacon; and the seductive baked-to-order Bittersweet Liquid Chocolate Cake. Lunch classics include fresh Maine Lobster and Jumbo Crabmeat Salad, the superb Chicken Schnitzel with Capers and Parsley, and “Best of Santa Fe’s” Sirloin Burger with roasted poblano chile, farmhouse white cheddar cheese, and Parmesan-parsley fries.

The picturesque gardens and romantic, elegant dining rooms have been the backdrop for creating lifetime memories.
