Rancho de Chimayó Restaurante has been praised in national and international press for more than four decades for the authenticity of its location and atmosphere, New Mexican cuisine, and the richness of its character.
When Florence and Arturo Jaramillo started the restaurant in 1965, they wanted their guests to feel as though they had been invited to an old Spanish home in the grand early tradition.
Surrounded by mountain views, Rancho de Chimayó is located in a traditional adobe house with interiors that feature exposed and time-weathered ceiling beams and simple whitewashed walls. The outdoor patio is a summer’s delight with beautiful gardens, fresh flowers, centuries-old trees, and bright splashes of color everywhere the eye can see.
Signature dishes include Carne Adovada — marinated pork simmered in a spicy red chile caribe sauce; enchiladas served layered, northern New Mexico style; tamales; posole; sopaipillas; and delicious homemade desserts. The full bar serves the renowned Chimayó cocktail; prickly pear lemonade and sangria.
Across the street is the Rancho de Chimayó Hacienda. The seven guest rooms of this adobe country inn wrap around a charming courtyard. All guest rooms have a private sitting area, en suite baths and a fireplace. A continental breakfast with fresh pastries is served.

“For all of us – not just the Jaramillo family, but for all of us who appreciate this land and culture – this restaurant is one place where this way of life stays alive,” Florence Jaramillo says.

MENU HIGHLIGHTS
Carne Adovada
Marinated pork cooked in a spicy red chile caribe sauce, served with posole. A Rancho de Chimayó specialty!
Plato Con Flautas
Rolled corn tortillas filled with your choice of pork, Tinga beef, or chicken, lightly fried. Served with refried beans, Spanish rice, guacamole, sour cream, and salsa.
Sopaipilla Relleno
A sopaipilla stuffed with your choice of shredded beef or chicken, beans, and Spanish rice. Topped with red or green chile, cheddar cheese, and guacamole.
Pollo Al Estilo Chimayó
Two chicken breasts topped with red or green chile, with melted cheese or chile con queso. Served with Spanish rice and calabacitas.
Plato Vegetariano Pequín
A chile relleno, refried bean and cheese taco, calabacitas enchilada, and Spanish rice. Served with your choice of vegetarian green or red chile.
Flan
A homemade rich caramel custard. The perfect end to your meal.
Chimayó Cocktail
A traditional favorite made with gold tequila, Crème de Cassis, and apple cider.
