The views inspire. The aromas tantalize. The ambiance alters one’s state of mind. The experience of being at a tranquil retreat engages all the senses at Bishop’s Lodge Ranch Resort & Spa. Las Fuentes is part of that experience, serving contemporary American cuisine with indigenous influences.
Chef Brian Shannon was born and raised in Santa Fe. He and his family are practically part of the western landscape that surrounds Bishop’s Lodge. His grandmother was an artist during the early years of the Santa Fe art scene and his father is a local potter. The culture of Santa Fe influenced Chef Brian’s tastes and culinary style over his professional life as he gained 20 years of experience in some of the finest restaurants in Santa Fe.
Flavors and spices found in Chef Brian’s cuisine include ancho and chipotle chiles, lime, olive oil, fresh garlic, and hand-picked oregano and basil.
“The creation of different combinations of flavors and textures is very satisfying to me,” says Chef Brian. “There are infinite possibilities.”
His signature dish is the Buffalo Rib Eye Steak because it exemplifies the ranch theme.
“It’s impressive and eye-catching, yet simple and elegant,” he says.
Chef Brian says he has been influenced by the techniques and styles of his favorite chefs; Thomas Keller of The French Laundry restaurant in Napa, California, Charlie Trotter in Chicago, and Ming Sai of Boston’s Blue Ginger.
“I’ve been influenced by chefs I’ve worked with,” he says, “I love to combine ingredients to evolve into something new.”
