Chef Eric DiStefano, who is absolutely passionate about food, stands with the top chefs of the world. From Los Angeles to New York to Paris, he has worked with all the greats. His extraordinary talent lies in his innate understanding of ingredients and an uncanny instinct about the elements of flavor. He is considered visionary in his ability to blend flavors and combine different types of food in unusual, creative ways.
Chef DiStefano calls his cuisine “Global Fusion.” The base of his sauces and technique are French, with culinary influences of Asia, the Southwest, and his own roots in Italy blended to bring taste to new levels. The wasabi sesame crab cake with Truchas caviar and beurre monte is a wonderful first course. For the main course, try the peppery elk tenderloin and apple woodsmoked bacon with roasted garlic fork-mashed potatoes, sugar snap peas, and creamy brandiedmushroom sauce.
