The Doubletree hotel is located in Albuquerque's spirited downtown near its celebrated Old Town. The unique cosmopolitan atmosphere of the newly renovated restaurant, Ember, will provide you with an experience like none other in Albuquerque.

Your culinary guide, Executive Chef Erick J. Ponce, brings with him from the Scottsdale Culinary Institute as well as life experience, seven years of knowledge and know how of tantalizing the diverse taste buds that visit Albuquerque, as well as that of the locals who have come to expect the best in cultural cuisine. As a native Californian and re-christened New Mexican, Chef Erick combines his local flavor to bring dishes of southwestern taste with California Coastal Flair.

The menu that Chef Erick has designed gratifies the piquant New Mexican palate by offering exotic appetizers from Green Chile Quesadillas and Southwestern Egg Rolls to Smokey Red Chile Tempura Shrimp. And you will definitely want to allow for entrées that include the zesty Stuffed Poblano, a roasted poblano chile filled with spicy Chimayo chile seasoned ground beef, or the traditional fiery Enchiladas, three corn tortillas topped with melted cheddar cheese and served with Spanish rice and charro beans. Choices that will definitely cause a heated debate, "Red or Green?"

Our menu also offers a blend of choices for those who do not wish to set their tongues ablaze. Flavorful alternatives such as the delectable Ruby Red Grilled Trout, served with herb au gratin potatoes, sauteed house vegetables and savory lemon and garlic brown butter. The Pan Seared Duck Breast, another of the unique offerings, seared to a golden brown, sliced, and presented with a caramelized fig sauce. The chef prepares even the bone-in New York Strip, which is grilled to juicy perfection and topped with tobacco onions, to satisfy even the most discriminating food connoisseur.

And of course for dessert, we offer a combination of Doubletree Culture and Sweet Tooth Gratification, by presenting the Doubletree Chocolate Chip Bananas Foster. A mixture of our famous cookie and naturally sweetened bananas topped with whipped cream, walnuts, chocolate sauce, chocolate chips and fresh berries
