Amid the canyons and arroyos of the desert Southwest, the lush lawns and flowering gardens of the Tesuque Valley provide an oasis of green. That's why when Jean-Baptiste Lamy came to Santa Fe in 1851 as New Mexico's first bishop, he made this property his country retreat.

It is now the site of Bishop's Lodge Ranch Resort & Spa and Las Fuentes Restaurant & Bar. Surrounded by the majesty of the western landscape and influenced by a rich cultural history, our talented culinary team brings skill and imagination to the task of serving creative American cuisine with indigenous influences.

"As a destination restaurant, I want people to feel comfortable and at ease," says Chef Patrick Hartnett. "We offer a variety of options — enhanced familiar favorites from childhood and regional comfort foods using the best ingredients."

Chef Hartnett's cuisine combines fresh herbs and spices and roasted chiles to create exciting and innovative dishes. For example, the elk tenderloin is glazed with red chile and maple, served with English cheddar grit cake, and a braised Swiss chard with a sauce of verjus and veal reduction.

"It sounds complicated, but it’s just a variation of cheese grits and greens — an old favorite," he says.

Las Fuentes' signature dish is the Pan-roasted grouper with a lobster risotto and caper berries, a parsley sauce with black olive oil, and a tomato chive salad — a version of Snapper Vera Cruz and another example of accentuating the elements to develop a variation on a traditional theme.
