Mark Kiffin, celebrated chef, owner and author of the Compound Restaurant has won the James Beard Foundation award as one of America’s Best Chefs. The Compound is Santa Fe’s premiere restaurant with Chef Kiffin’s acclaimed seasonal contemporary American cuisine derived from Santa Fe’s rich heritage of regional and Mediterranean influences. The New York Times, Gourmet Magazine, The Wall Street Journal and Wine Spectator have all selected the Compound as Santa Fe’s favorite. Before its incarnation as a restaurant, the Compound was a centerpiece of a group of houses on Canyon Road known as the McComb Compound. In the early ‘60‘s, Will and Barbara Houghton acquired the main house and converted it into a restaurant. It was their decision to bring in Alexander Girard, internationally recognized textile, graphics, interior designer and architect who gave the space its distinctive look — making it one of America’s great artistic restaurants — and who is best remembered for his generous donation of more than 106,000 pieces to Santa Fe’s International Folk Art Museum.
Chef Kiffin’s menus focus like no other on the exclusive changes in seasons. Hearty braised dishes in the fall and winter using the abundant apples, pears and cider from local harvests, osso bucco and porcini risotto, then on to the farmers’ markets around the country for the freshest in Spring and Summer asparagus, morel mushrooms, English peas, heirloom tomatoes, sweet corn, naturally raised organic lamb and delectable strawberries. Specific to the Compound is a menu of specialty cheeses selected from the world’s finest producers. Pairing wines with Chef Kiffin’s cuisine is integral; the wines are thoughtfully tasted and chosen and presented to their best advantage in beautiful hand-blown crystal.
The picturesque gardens and romantic, elegant dining rooms have been the backdrop for creating lifetime memories. Every special event is planned to the smallest detail and brought to life with the finest in service and gourmet cuisine for 12 – 250 guests.
