Great Chef

Señor Geronimo Lopes would be very pleased if he knew how famous his 250-year-old hacienda on Canyon Road has become. The Landmark adobe has been transformed into a cutting edge, landmark restaurant – elegant, contemporary – serving the highest quality, creative food. Not only is Geronimo considered the finest Santa Fe has to offer, it ranks with the finest restaurants in the country.

When you enter Geronimo, you are welcomed by owners Cliff Skoglund and Chris Harvey who are dedicated to insuring you the highest quality dining experience possible. From that moment on, you are treated as if you were a guest in their home. The hospitality continues with the attentive, friendly waitstaff who share the same passion for the food and the restaurant that the owners and chef have. The exquisite decor, with its contemporary artwork, comfortable bancos and soft, graceful curtains transforms the high-ceilinged, spacious interior into one of serenity and intimacy, conducive to socializing.

It is in this elegant setting that the food takes center stage. Chef Eric Di Stefano, who is absolutely passionate about food, stands with the top chefs of the world. From Los Angeles to New York to Paris, he has worked with all the greats. His extraordinary talent lies in his innate understanding of ingredients and an uncanny instinct about the elements of flavor. He is considered visionary in his ability to blend flavors and combine different types of food in unusual, creative ways. The presentation of the food is an art form in itself, a stunning prelude to the meal to come.

Chef Di Stefano calls his cuisine “Global Fusion.” The base of his sauces and technique are French, but the distinct culinary influences of Asia, the Southwest and his own roots in Italy, intermingle to create sensations that bring taste to new levels. Take for example, the Seared Hudson Valley Foie Gras with Sugar Pecans, Candied Ginger, Brioche French Toast and Cranberry compote for a first course. For the main course, try the Grilled Hawaiian Swordfish atop Burgundy and Onion Braised Organic Short Ribs, which Chef Di Stefano embellishes with Soft Corn Polenta, Japanese and White Horseradish jus. Or, enjoy Grilled Maine Lobster with Farmer's Corn and Caper Compote, Onion Potato Cakes and Spicy Chile Garlic Sauce.

Geronimo has consistently won major local and national awards. The restaurant has a strong local following along with a large national and international clientele. If you're going to a restaurant for fine dining, eating at Geronimo's is an experience that must not be missed.
