Chef Fama’s cuisine, steeped in traditional Mediterranean influences, is uniquely creative and adventuresome. His signature Grand Tasting Menus, each consisting of numerous selections, adjust with the seasons and afford many culinary opportunities for even the most discerning diners. Typical is the Lobster Luxury menu, beginning with a simple knuckle meat presentation with orange-vanilla infused butter followed by a delightful Claw Risotto. The seared Sonoma foie gras with butter poached lobster tail in a white balsamic reduction will take you to the limit, but only after you wrap up this feast with a mango and cucumber vinaigrette salad with lobster bacon.

The world-class wine service, orchestrated by talented Wine Steward Diane Hebert and recently recognized by Wine Spectator with an Award of Excellence, is well balanced, beautifully presented and fairly priced. The entire staff is well prepared to provide expert advice on selection and pairings.

Pastry Chef Maxime Bouneou brings it all home with an exquisite presentation of unique and tasty selections that include a delightful upside-down Quince Tarte with a spiced Chimay sorbet, a Hazelnut and Manjari Chocolate Bar and a playful carrot cake with saffron crème brulee. The Cheese Service is known as one of the best in the Western United States. With Fromagier Matthew Merrill directing the finest artisanal selections from around the world, save room for these seasonal and exceptionally persuasive treats which arrive at your table on the eloquent ‘Grand Chariot of Cheeses.’

In addition to a sumptuous daily lunch service starting at 11:30 a.m., a unique and extensive culinary experience is presented each Sunday with the Rancher’s Brunch. A local favorite, one can expect to be presented with a most satisfying array of special treats prepared on order.
