The C Restaurant + Bar at InterContinental The Clement Monterey, on historic Cannery Row is located next door to the acclaimed Monterey Bay Aquarium, one of the world’s foremost oceanic research and educational centers. Overlooking the spectacular Monterey Bay, guests at The C Restaurant + Bar can fully experience the best of the area — Chef Regester, draws from the Central Coast’s bounty of fresh seafood and locally grown produce, as well as the procurement of the highest quality ingredients such as Niman Ranch pork and beef, thereby creating menu selections for the most discerning palates. The Monterey Bay Aquarium’s highly regarded Seafood Watch guidelines are those which Regester follows in selecting seafood for his dishes. Chef Regester brings the same hands-on approach to The C Restaurant + Bar that served him well at his previous role as executive chef for The Restaurant at Wente Vineyards in Livermore, California. An award-winning chef with numerous accomplishments, Regester most recently served as the executive chef for the First Annual Pebble Beach Food and Wine event, which involved planning, organizing, and managing logistics for more than 50 of the country’s top chefs throughout the four-day event at the famed Pebble Beach resort. The C has a separate bar area for cocktails and other beverages along with an extensive appetizer menu. The C also has special “cuisine to go” offerings available from the outside terrace for visitors who would like to walk up and place an order.
