The original 59 Diner (3801 Farnham St., Houston, TX 77098; 713-523-2333), just off Highway 59, dishes up Texas trademarks such as chicken fried steak and Frito pie. The diner décor and pink-uniformed waitresses complete the calorie-laden time warp. Open 24 hours.

If you’re looking for late-night chow that’s cheap and full of flavor, head to Mai’s Vietnamese (3403 Milam St., Houston, TX 77002; 713-520-7684) in Midtown. Only a few bucks will cover tasty spring rolls and a soup, or knockout vermicelli JUPITER IMAGES bowls (order No. 38 with barbecued pork and egg rolls). Open until 2:30 a.m. weeknights, 3:30 a.m. weekends.

Day or night, it’s true, Katz’s NYC-themed deli “never kloses.” This two-story Jewish deli (616 Westheimer Rd. east of Montrose, Houston, TX 77006; 713-521-3838) dishes out breakfast, lunch, and dinner 24/7. Colossal omelettes, corned beef hash, giant sandwiches, and soups appear on the extensive menu — all kosher of course.
